Mix cumin, garlic, salt, chili powder in bowl and add water. Place leg quarters in water and refrigerate overnight. Next day fire up your grill and place chicken skin up on grill. Chicken should cook for at least 1.5 hours.
When chicken is done, remove from grill and set aside to cool. When chicken is still slightly warm, remove skin and start to pull chicken off of the bone into small chunks of meat. When finished, place pulled chicken in oven to stay warm.
Place olive oil on a griddle at medium heat. Take tortillas and rub the olive oil and spread it across the griddle. You are going to want to do this with both sides to make sure each side has some oil. Cook to your liking, flipping once.
To plate your tacos, place a corn tortilla down, then place pulled chicken on top and cover with coleslaw and THE GOT DAMN SAUCE, Add a little cotija cheese and some fresh cut jalapenos to really make it go... Enjoy!
The Got Damn Brisket
Ingredients: 1 Brisket 7-13 lbs 1 large onion chopped finely 8 garlic cloves Minced 1/4 cup of Kosher salt 5 tablespoons of coarse black pepper 4 cups of vinegar 1 bottle of cranberry juice
Place onion, garlic, salt, pepper, vinegar and cranberry juice in a deep pan. Place brisket in pan and cover with foil. Brisket should Marinate for atleast 24 hours.
Prep grill or smoker with favorite wood and Charcoal to one side of the grill. Liberally coat the brisket with salt and pepper and place on the opposite side of the grill. Smoke for 12 to 14 hours adding wood as needed.
